Beef soup
(Pho bo)

Ingredients:

- lkg beef bones

- 400g thigh beef

- 250g  slender loin beef

- l,5kg  flat rice vermicelli

- 300g soya-beans

- 2 lemons, 3 onions

- Red pepper, onion leaves

- Salt, black pepper, monodium glutamate

- A hand of ginger

- A small piece of cinnamon

- Mashed salted soya-beans"

- Mashed red pepper

To prepare:

- Clean beef bones and thigh beef. Drain them. Dry thigh beef with a towel. Fry ginger and onion on burning coal. Crush ginger lightly. Clean soya-beans and aromatic vegetables. Slice lemon and red pepper.

- Boil ten bowls of water and beef bones and thigh beef. Add some salt, some ginger and fried onion in the soup, and a small piece of cinnamon.

- Drain boiled thigh beef. Cut it in thin slices. Slice slender loin beef. Season the soup with glutamate and other spices, if necessary.

- Put some slightly boiled soya-beans, some boiled rice vermicelli, some thigh beef and slender loin beef into a bowl. Add some sections of onion and pieces of onion leaves. Pour the boiling soup into the bowl.

- Served hot with mashed salted soya-beans and mashed red pepper or slices of pepper, lemon. Also served with fresh soya-beans and sections of onion.
