Grilled meatballs

Ingredients:
| - 500g lean pork
- 100g fat meat
- 200g shrimp
- 100g scraped thac lac fish
- 200g of rice papers
- Chillis
- 1 xiem coconut
- 2 sour star fruits
- 2 green bananas
- 1 cucumber |
- 1 carrot
- 1 turnip
- 2 small bowls of vinegar
- 2 citronellas
- 200g of lettuce and salad greens
- Sugar
- Cooking oil, onions, garlic, spices: pepper, salt, monosodium seasoning...
- 10 chopsticks |
Ingredients to make sweet soya sauce:

200g of shrimps

100g of glutinous rice
- 50g of garlic and dried onions |
- 200g of sweet soya sauce

200g of pig bones |
To prepare:
- Mince lean pork, mix it with garlic, add salt, 1 spoon of sugar candy, pepper, and monosodium seasoning.
- Thac lac fish: mix scraped fish with hashed onion and spices.
Shrimps: wash shrimps with fresh water, remove covers. Salt and wash the shrimps with water of xiem coconut, then dry. Grind dried shrimps, then mix them with minced lean pork, scraped thac lac fish, and spices: garlic, salt, pepper, sugar.
- Fat meat: boil, cut into slices, then preserve meat with salt and sugar. After mixing with above-mentioned mixture, roll them into balls with diameters of 1.5 -2.0cm each. Stab these balls with whittled chopsticks, roast the chopsticks on the very hot charcoal fire, then put them on plates.
- Citronellas: chop, put into 2 bowls of boiled fresh water for 10 minutes. Take the chopped citronellas out, mix them with a table spoon of vinegar and 1/2 table spoon of sugar.
- Arrange the coconut leaves into a square or hexagonal shape to form a box roughly 25x30cm wide and place a pineapple leaf on top.
- Carrot and turnip: Cut into flower (or leaf) shapes, mix with vinegar and sugar.
- Green bananas: remove skins, slice, and put the slices into water mixed with vinegar.
- Sweet soya sauce:
+ Glutinous rice: mince and boil.
+ Pork bone: boil well for 2 bowls of soup.
+ Shrimps: clean well, remove covers, and mince.
+ Boil cooking oil, put chopped onion and garlic into the pan, mix with glutinous rice and shrimps well. Add sweet soya sauce and 2 bowls of pork bones soup. Cook this mixture till it becomes a pasty consistency, add a little of vinegar and sugar.
+ Pour sweet soya sauce into a small bowl, and put chopped chillies on.
To serve:
Serve grilled meatballs with salad, starfruits, green bananas, cucumber and a bowl of sweet soya sauce.
