Fish soup
(Canh ca)

Ingredients:

- 1kg of freshwater (Ca qua)

- Fresh vegetables

- Onion, tomato, dill

- Salt & chilli

- Rice noodles

- Doc fruit (if it is not in season, you may use - Star fruit of Tamarind)

To prepare:

- To start, wash and clean the fish. Cut the fillets from either side and remove all bones. Slice the fish into pieces of about 4x7cm. Keep the spine and head intact and put aside.

- Fry the Doc fruit until it turns golden brown. If you use Star fruit of Tamarinds, don not fry them, simply clean them and chop them into small pieces. Clean and slice the tomato, onion and dill.

- Boil the fish's spine and head with the Doc fruit, tomato and 2 teaspoons of salt. Add the onion and dill just before serving. Stir fry the pieces of fish. Pour boiling water through the rice noodles.

- To serve, arrange the pieces of fried fish around the spine. Serve with chilli, fresh vegetables, fish sauce and warm rice noodles.
